The Grape & Its Cultivation: The same grape responsible for Hungary's legendary Tokaji, Šipon thrives in the steep, terraced vineyards of Štajerska. It buds early and ripens late, and its defining characteristic is its ability to retain incredibly high acidity even at full ripeness.
Winemaking & Styles: Primarily made as a bone-dry, mineral-driven white wine that is exceptionally age-worthy. It is also used to produce outstanding sweet, late-harvest wines.
Tasting Profile: Dry Šipon is electric and intense, with flavors of quince, lime, green pear, and a pronounced smoky or flinty minerality. With age, it develops complex notes of honey and nuts.
