Teran
Primary Region(s): Primorska (exclusively in the Karst).
The Grape & Its Cultivation: Teran is not a grape, but a unique wine made from the Refošk grape grown only on the iron-rich red soils (terra rossa) of the Karst plateau. The soil dramatically changes the wine's chemistry and flavor.
Winemaking & Styles: A wine protected by Slovenian law. It is known for its incredibly high acidity and high levels of iron and lactic acid.
Tasting Profile: Deep ruby red in color, Teran has a very distinct aroma and flavor of sour cherry, wild raspberry, and a savory, almost bloody or metallic note from the iron in the soil. It is tart, refreshing, and a phenomenal food wine.
